When you are juggling between work stress and a demanding child, you need to apply shortcuts in life. Crazy times call for crazy ideas and Madhushree cooked this simple poached fish. We aren’t too big on the health factor but this dish is super healthy as well. How do you deal with stress?

– I eat, I plan vacations, I buy online stuff and I download movies (I know it is illegal but I am a sinner). I do anything which will detach me from reality.

– I also try to get detached when I am stressed. I surf the internet (means finding out hidden gems of trashy b grade hindi movies). At times. I spend time on Facebook (means I stalk people). I don’t feel like speaking to people (means it is a visible DND sign on my face).

We are not naming the characters here but this has been an imaginary conversation between a couple. Madhushree and I both have been stressed for the last few days for numerous reasons. Office is one and then Tugga, our son, has also not been keeping well. The work pressure in office is beyond comprehension. We would plan something for the day and within the first hour, all our plans would fall apart. It was in the midst of a chaotic time in office, in-numerous impromptu meetings and monthly budget discussion. We realized that we will fall short of fund and I had just 1 hour in the hand for a client visit.

The intercom rings….

– Listen the bungalow type villas in Pudduchery are wonderful

– I don’t have time now and I am far away from all these. I don’t know what to answer to the client and I thought you had too much work

– Yes you know me, I am too stressed and I want switch off for sometime

This conversation continued for a couple of more minutes. The next day by 3 PM, although we managed to handle and tick off most of the stress causes, we were already under mental fatigue. We bunked office. We came back home and before you knew, we jumped into our comfort zones. Madhushree was into kitchen and I was sitting with my laptop for this blog post.

Poached Fish In Coconut Milk

There couldn’t be an easier recipe than poached fish. While the marination takes 10 minutes only, the sauce takes 5 – 6 minutes. Then it is all about adding the fish to the sauce and cooking it. When you cook with a white fish filet, it is a delicate cook. No more than 3 – 4 minutes and you are done with the recipe. The cooking time would of course depend on the thickness of your fish fillet. If you have a thick slab of fish, then it will take you about 4 minutes (two minutes on each side).

It is easy to overcook the fish. Be gentle and as soon as the colour turns, turn the fish around if you have a thick slab. For a thin fillet, you don’t need to turn it around. The recipe says coconut milk/cream. While coconut milk is doable, coconut cream gives a better texture. With coconut milk, you will have to cook longer to make it creamy. You can also choose to leave it a bit runny and have the dish as a soup. You can use kafir lime leaves as well towards the end for flavouring. This dish doesn’t taste great when re heated. While re heating, the fish fillet cooks further and it loses its soft flaky texture. Also, since the fish is not fried, it tastes best when made fresh.

Poached Fish

This is one of the easiest fish recipes ever and the best part is, it is poached and hence, healthy. It is light and flavourful and any white fish fillet can be used for it. The recipe is inspired from Donna Hay’s lime and coconut poached fish. I have tweaked it to my taste as well as the ingredients easily available to me.

Ingredients
  

  • 300- 400 gms White Fish Fillet I have Used Bhekti
  • 300 ml coconut milk or coconut cream
  • 1 1/2 Lemons
  • 1.5 tsp freshly grated ginger
  • 1 tbsp fish sauce alternately you can use soy sauce
  • 1 tsp sugar
  • 1 tsp grated lemon rind I have used Gondhoraj Lemon rind
  • 1/2 cup chopped coriander leaves
  • 1 - 2 nos chopped green chilies
  • salt to taste

Instructions
 

  • Wash the fish fillet and pat them dry. Marinade the fillet with salt and juice of 1/2 a lemon and keep aside for ten minutes.
  • In the meantime, prepare the sauce.
  • Take a frying pan and add coconut milk or cream. Keep the heat at medium to low.
  • Add freshly grated ginger, green chilies, lemon juice, fish sauce and sugar and let the sauce thicken a bit.
  • Then add the marinated fish and place them gently around the pan. If it is a thick slab, you will have to turn the fish around after a couple of minutes. It takes 3- 4 minutes for a thick slab to cook and 2 - 3 minutes for a thin slab.
  • After adding the fish, add grated lemon rind and chopped coriander. Stir around and the minute the fish is cooked, turn off the heat.
  • Serve poached fish with steamed rice. If you have a thinner consistency, you can have it as a soup too.
