– I am a very weird person when I am stressed

– I show off that I am stressed

– What do you do when you are stressed?

– I eat, I plan vacations, I buy online stuff and I download movies (I know it is illegal but I am a sinner). I do anything which will detach me from reality.

– What do you do when you are stressed?

– I also try to get detached when I am stressed. I surf the internet (means finding out hidden gems of trashy b grade hindi movies), I spend time on facebook (means I stalk people), I don’t feel like speaking to people (means it is a visible DND sign on my face where anyone trying to strike up a conversation gets barked at)

Poached fish close up

We are not naming the characters here but this has been an imaginary conversation between a couple. Madhushree and I both have been stressed for the last few days for numerous reasons primarily for office and then Tugga, our son, has also not been keeping well. The work pressure and hence the stress in office was so much that we left home having something planned for the day and within the first hour of the day, we didn’t know how we would end the day. In the midst of such a time, when I have just completed the meeting with the accounts and the logistics team, made the monthly budget and clearly figured out that we will fall short of fund and had just 1 hour in the hand for a client visit, which will determine the next lot of deliverables against a steep deadline, the intercom rings.

– Listen the bungalow type villas in Pudduchery are wonderful

– I don’t have time now and I am far away from all these. I don’t know what to answer to the client and I thought you had too much work to plan the recipe calendar

– Yes you know me, I am too stressed and I want switch off for sometime

This conversation continued for a couple of more minutes.

The next day by 3 PM, although we managed to handle and tick off most of the stress causes, we were already under mental fatigue… We bunked office. We came back home and before you knew, we jumped into our comfort zones. Madhushree was into kitchen and I was sitting with my laptop for this blog post.

What do you do when you are stressed? What are your stress busters?

This was dinner and the next day lunch too.

– Were you disappointed when you got to know me?
– How can you ask that?
– I’m such a mess.
– I love your mess.

Ruby Sparks.

Poached fish ready to eat

Poached Fish in Coconut and Lime Sauce

This is one of the easiest fish recipes ever and the best part is, it is poached and hence, healthy. I (Madhushree) have used pomfret in the recipe; however, one can always use any white fish fillet for making it. The recipe is inspired from Donna Hay’s lime and coconut poached fish. I have tweaked it to my taste as well as the ingredients easily available to me.

Prep Time: 10 minutes

Cooking Time: 15 minutes

Serves: 2

Ingredients:

Pomfret Fish 2 whole medium size Coconut Milk/Cream 300 ml
Lime Juice 60 ml (1/4 cup) Green Chili 1 or 2
Lemon Rind ½ tsp Fish Sauce 1 tbsp
Ginger paste 1 ½ tsp Coriander Leaves ½ Cup
Salt To Season

Method:

  • Wash the fish and pat it dry. Score the skin of the fish with a sharp knife and season with a bit of salt and ½ a tsp of lime juice.
  • In a frying pan, pour the coconut cream. Keep the heat at medium and one by one add the ginger paste, chopped green chili, fish sauce, lime juice and bring it to a boil.
  • Once it has thickened a little bit, add the fish. Check the seasoning and add more salt if required. While marinating the fish, one must be careful as to not season the fish too much since fish sauce is quite salty.
  • Lower the heat once again. Cook the fish on each side for 3 -4 minutes.
  • Finally add the lemon rind (I have used the rind of gondhoraj lebu) and the coriander.
  • Serve it hot with some steamed rice
