I am going to make Peanut butter cookies – Madhushree declared on a rainy Sunday evening

The youngest foodie of the family ( three and half years old) decided to help her in kitchen.

As working parents, Sunday is when we make it a point to spend maximum time with our son Tugga. Tugga also has realized by now that Sunday is his baba- mamma time. The best part of Sunday is when he opens his eyes in the morning and asks a simple, yet loaded question – Has Sunday happened? If its a ‘yes’ then you can instantly see that sparkle in his eyes and he knows that its time for Madagascar, Lion King and Ice Age – back to back, till such time he feels tired. By now he knows almost all the dialogues and he enacts the films while watching.

In order to get him out of this habit (which we had induced on a Sunday, where we had multiple food shoots) and get rid of the chances of him becoming a couch potato – I have started taking him to the Tennis court on weekends. As I play, he spends his time with his toys and occasionally acting as our ball boy.

This was a Sunday evening like that, when I was about to leave for my tennis and he suddenly felt like baking, or rather helping his mother. We don’t know what he will grow up to be, neither we want to force upon anything- as long as he enjoys – we let him be ..

Peanut Butter Cookies (Flourless)

This is the easiest ever biscuits with the least possible ingredients. I got this recipe from a master class of Matt Preston at Masterchef Australia season 6. After making it the first time, I thought it was too sweet and hence have just reduced the quantity of sugar by one fourth cup.

Prep Time: 10 Minutes

Baking Time: 9 Minutes

Ingredients:

Peanut Butter 270 gms
Egg 1
Sugar ¾ cup

Method:

In a mixing bowl, take all the ingredients and stir it together. The dough is a bit on the wet side. With wet hands, roll the dough into small round balls. Flatten them on the base of your palm and place on a cookie sheet. Then using a fork, press gently on each biscuit to give the ridges.

Bake for 9 minutes in a pre heated oven of 190 degrees on the top rack.

Take them out after 9 minutes and remove on a wire rack and let them cool down before devouring them.
